Tip Tuesday

Use this cute decor element called Spooky Expressions (three black "faces"#117568, $4.95) to dress up a pumpkin for Halloween. They make great hostess gifts or door prizes. It's quick and easy and the pumpkin lasts much longer because your not cutting into it.

My Mom's Awesome Potato Salad

This one goes out to my good friend Jodie S. who cut my hair today!

My Mom's Awesome Potato Salad
2 lbs. Yukon Gold potatoes, cut into 1 1/2 inch cubes (I leave the skins on)
1 small onion, finely chopped--and I do mean finely!
1/4c. your favorite Italian dressing (I use Paul Newman)
1 tsp. table salt
1/8 tsp. pepper
Heat 2 quarts of water, salted with 2 Tbsp. kosher salt, to boiling. Add potatoes. Return water to boiling and reduce heat to medium. Cover and cook until the potatoes are tender, takes about 15 minutes.
Drain the potatoes and place in a large plastic bowl. While the potatoes are still hot toss with the onions, dressing, salt and pepper. Cover bowl with plastic wrap and refrigerate at least 2 hours to marinate--I usually leave the bowl in overnight.
1/2c. Mayonnaise
1 medium stalk celery, finely chopped
4 small garlic dill pickles (polish dills will work too), chopped
6 hard boiled eggs, chopped** see note below
3 Tbsp. French's yellow mustard
Just before serving toss all of the above listed ingredients with the potatoes.
Makes 4 to 6 servings

Note: Perfect Hard Boiled Eggs
In a saucepan heat enough water to cover the eggs to boiling. Ladle eggs into boiling water and return the water to boiling. Cover and reduce heat to low, cook for 15 minutes. Rinse eggs in cold water.

Tip Tuesday

Welcome to the First Tip Tuesday on my Blog! I have been publishing Tip Tuesdays for about 2 years now via e-mails to customers, friends who are stampers and members of my team. The picture above is of a punch template I purchased at the Momento Mall when I was at the Stampin' Up! Convention in Salt Lake City 2 weeks ago. The item number and the name of each punch is printed on each of the blue colored plastic squares--but it's printed in black and it's hard to read. I purchased the plastic tape at Walmart, it was inexpensive. I placed the tape on the backside now you can read all the info! I noticed one of the Presenters on stage at Convention had done this and I copied it, well....because I thought it was a great idea!

I'm Baaaccck!

Well, after days of trying to get home on "Stand-by" we came to the realization that we were going to have to purchase tickets. My husband booked us on USAir. Most of the day and three airplanes later we arrived back home. It's going to take me a couple of days to get things back to normal around here....I need to go to the grocery store and then there's Mt. Washmore to deal with--until then,

Stuck in Seattle

When I retired from Continental Airlines in 1997 part of the Early Retirement Package was airline benefits. At the time it looked like a pretty sweet deal....unlimited Stand-by passes to anywhere Continental flew, but these days post 9-11 and airline financial woes, flying "Stand-by" is next to impossible! Looks like my son and I will be stuck in Seattle for awhile. Thank goodness we have family here to visit with.
